Tomato
& Crab Soup
(Don't
panic, it's all from tins)
Every
time I make this soup someone asks me for the recipe!
Ingredients:
1 large can of tomato
soup
1 cup water
1/4 cup of dry cooking sherry
2 cans of diced tomatoes
3 teaspoons of curry powder
8 drops of Tabasco sauce
2 cans of crab meat (drained)
1/2 cup of cream
Method:
1. Over a gentle
heat add each ingredient (except the cream) into a large saucepan stirring
as you go.
2. Gradually bring to boil then reduce to a simmer.
3. Add the cream and continue to stir.
4. Serve with warm oven rolls.
Variations:
- experiment with
extra curry powder & Tabasco to taste
- buy tins of whole peeled tomatoes& cut them into chunks for a
thicker consistency
